About the Coffee:
The Huehuetenango region in Western Guatemala is well known for producing vivid acidity and prominent
fruit notes. This SHB EP FTO coffee from the region combines all the attributes of coffee from
Huehuetenango with its focus on high altitude and clean processing. Due to its remoteness in one of
Guatemala’s three non- volcanic regions, most producers process their own coffee. Luckily, an abundance of
streams and rivers makes creating mills easier. Farmers selectively hand pick cherry and pulp it on their
farms. After fermenting, parchment is agitated to remove remaining mucilage and washed with clean water.
Farmers typically lay parchment to dry on raised beds that are stacked on top of each other to maximize
space.
